This Sweet and Spicy Potato Puree recipe marries the best of both worlds and takes us just south of the border with the fragrant flavors of sweet potato, cilantro, jalapeno peppers and garlic.
Lemons, oranges and other citrus fruits are usually the first to come to mind when considering a good source of vitamin C. We all know the important role vitamin C plays in strengthening the immune system and warding off cold and flu viruses but did you know sweet potatoes contain just as much vitamin C as lemons or oranges? Sweet potatoes are also a great source of vitamin B and vitamin D which help build healthy bones.
Sweet — but not too sweet.
As sweet as sweet potatoes are, especially this Sweet and Spicy Potato Puree, they are natural energy stabilizers meaning they help regulate the blood sugar spikes that can often lead to fatigue and weight gain.
I actually discovered this recipe when shooting recipes for the Healthcorps teen cookbook, Healthy Bites and Tasty Delights. This is a recipe that adults, young teens, even kids and easily prepare and enjoy. This Sweet and Spicy Potato Puree is widely enjoyed in the cooking clubs hosted by Healthcorps across the nation and was voted one of their favorites.

Try this recipe at home or some of my other sweet potatoes favorites : Sweet Potato Wedges with Caramelized Pecans and Hasselback Sweet Potatoes.
Prep time 25 minutes
1-2 Tbsp. olive oil
1/2 yellow onion
2-3 cloves of garlic, minced
1 large sweet potato (or 2 small sweet potatoes), thinly sliced
1-2 chipotle or jalapeno peppers, minced
14 ounces’ veggie stock
Cilantro to garnish
Salt, pepper, and/or cumin to taste
1. Chop the onion and the sweet potato.
2. Mince the garlic.
3. In a medium-size pot, heat the oil over medium heat and sauté the onion and garlic for a couple of minutes.
4. Add in the potato.
5. Add the stock and turn the heat down to medium/low.
6. Let it cook for 20 minutes or so, depending on the size of the potato slices.
7. Season with salt, pepper, and/or cumin and the jalapeño peppers.
8. Place the sweet potatoes and half of the stock in a blender, Vitamix, Thermomix or any other brand.
9. Blend until smooth and creamy. Adjust the consistency of the puree if needed and check seasoning.
10. Pour into a nice bowl and sprinkle with fresh herbs and ENJOY!
