Avocado Halloumi Burger

It should come as no surprise that I am also on the avocado bandwagon. Why wouldn’t I be? They are so delicious; and so fun to cook with. And let’s be honest — avocado goes with everything. Recently I had the opportunity to travel to The Avocado Show in Amsterdam with my team to try some of their delicious avocado staples (we’re pretty big fans of their edible food art) and I was inspired to create the Pink and Avocado Halloumi Burger. The Pink and Avocado Halloumi Burger is a vibrant pink and green made with Halloumi cheese and rests on fresh ciabatta bun. If you’ve never had the grilled Halloumi, you’re in for a treat. Enjoy!

Serving 1

1 ciabatta bread (…or any crispy, organic bread of your choice)
½ avocado
3 tbsp healthy mayo
1-3 tsp beet juice
1 slice grilled zucchini (optional)
1 slice grilled red onion (optional)
¼ cup arugula
1 slice Halloumi cheese

The Pink Sauce
1. Mix the mayo and the beet juice. You can start with 1 teaspoon of beet juice and add more if you want a runnier consistency.

The Burger
1. Heat a pan with 1 teaspoon olive oil and cook the halloumi slice on high heat. Flip it once to make sure each side is golden brown. The outside of the cheese should appear a little crunchy and the inside should remain soft.
2. In a separate skillet grill the optional veggies.
3. Peel and slice the avocado.
4. Cut the bread in half.
5. Assemble The Pink and Avocado Halloumi Burger by starting with a slice of avocado, the slice of halloumi, the grilled veggies or veggies of your choice, a tbsp of beet mayo and another slice of avocado.
6. Top with the bread and serve!

I served this burger with a side of extra beet mayo for dipping.
