I never thought to add peach to my carrot soup but this week I tried it — and what a wonderful discovery! Who would have thought — Peach and Carrot Soup is a thing!

The vibrant color orange not only represents strength and endurance on the spectrum of color meaning and psychology but can also be used to energize mood and home — as well as your nutritional pallet.
PEACH AND CARROT SOUP and health
Orange fruits and veggies carry an abundance of antioxidants, vitamins, fiber and phytonutrients good for your skin, eyes and heart. They have also been known to decrease your risk of cancer.
Beta-carotene, what orange foods are most known for, is a powerful antioxidant which gives orange fruits and vegetables their brilliant color. Beta carotene is also a precursor for vitamin A which neutralizes the damaging free radicals in the body and helps keep the immune system strong. Vitamin A also plays an important role in eye health and vision. And let’s not forget Vitamin C. Orange foods like in the Peach and Carrot Soup are FULL of Vitamin C. Vitamin C helps boost our immune system, protect against cardiovascular disease and rebuilds collagen in our skin.

PEACH AND CARROT SOUP
Prep time 15 minutes
1 big carrot, peeled and chopped
1 peach, chopped
2 scallions, sliced
⅕ cup coconut milk
⅕ cup water
½ Tbsp. lime juice
Salt and pepper to taste
Decoration: cilantro, seeds of your choice
1. Place the carrot, the peach and the scallions in a pot, cover with the liquid and cook until veggie and fruit are soft and ready to be blended.
2. Place in the blend, add the lime juice, salt and pepper and blend until smooth and creamy, you can more water or coconut milk if you want to adapt the consistency.
3. Serve warm or cold and decorate with cilantro
