COCONUT PANNA COTTA TOPPED WITH PASSION FRUIT 1024 1024 Delphine Remy | Holistic Nutrition & Eating Psychology Coach

The sun is out and beach season is here. Let’s welcome the warmer days with the tropical flavors of this full and rich coconut panna cotta dessert, lightened up with a topping of delicious passion fruit.
Not only refreshing and delicious — but good for you. Read up on the health benefits of coconut by following my upcoming blogs on “Reasons to fall in love with coconut : Part 1” and ““Reasons to fall in love with coconut : Part 2”.

Prep time 7
Portions 4

1 and ¾ cups full fat coconut milk (light will work too, but it is not as good!!)
a tiny bit less than ½ teaspoon agar powder
2 tablespoons maple syrup (or another sweetener of choice)
1 passion fruit for garnish
mint leaves

1. Combine coconut milk, agar powder and the sweetener in a saucepan and bring to a boil over medium heat.
2. Boil for about 3 minutes, then turn the heat off and let cool slightly (No worries about the consistency, it will thicken as it cools!)
3. Pour into 4 cute glasses and chill for a few hours. You can also take the panna cotta out of the glasses, but in this case, you need to grease the glasses before pouring the panna cotta.
4. Now thickening time in the fridge, it will turn into a creamier crème brûlée like consistency. If you prefer a runnier consistency, use less agar agar next time.
5. Top with passion fruit and a mint leaf and serve cold.
6. Enjoy!
