Chocolate and Avocado Mousse

Another healthy dessert option for vegans and non-vegans alike. This rich mousse is made with unsweetened cocoa powder and avocados and the good news is you don’t have to feel like you’re cheating your diet. Studies show eating a piece of dark chocolate a day can improve your health and lower your risk of diseases. Raw cocoa is full of iron, fiber, magnesium, copper, zinc and potassium. There are of course other health benefits to list, like improved brain function and lowered blood pressure, but we could be here a while. Bottom line – raw cocoa and avocados pair well for a long list of health benefits camouflaged as a dessert.

Cook Time 5 min
Serves 2-4

1 large or 2 small ripe avocados
2 tablespoons unsweetened cocoa powder
¼ cup almond or coconut milk
1-2 teaspoons pure maple syrup, to taste
1 tsp natural vanilla extract
Berries, for garnish

1. Place avocados, cocoa powder, almond or coconut milk, maple syrup, and vanilla extract in the blender.
2. Puree until smooth, stopping when needed to scrape down the sides. If the mixture is too thick , add a little more milk to reach the consistency you like.
3. Use a spoon or a pastry bag to fill the cups and top with berries and fresh mint.
