This delectable can be served as dessert, a snack or paired with a mixed green salad for lunch.

Ingredients for Baked Fig
2 figs per person
4 slices goat cheese per person. You can use fresh or aged goat cheese.
Fresh thyme
Raw honey
Fresh ground pepper
Ingredients for Salad
Mixed greens of your choice
Veggies of your choice (carrots, tomatoes, olives, …) (optional). I happened to have some in the fridge!
Pine nuts
Pomegranate seeds
3 tbsp olive oil
1 tbsp balsamic vinegar or vinegar of your choice
Kosher salt, freshly ground pepper
Instructions
1. Preheat oven at 400 degrees F.
2. Prepare the figs buy cutting them in half, place a thick slice of goat cheese on each fig half. Top with ½ tsp honey, some fresh thyme and ground pepper.
3. Bake in the oven for 15 minutes or until goat cheese is golden brown.
4. Prepare salad with desired ingredients, drizzle vinaigrette over salad and toss gently to coat.
5. Top salad with the baked fig and eat it right away!
